Sweet Potato Brownies

We all like chocolate. We all like treats!
BUT, we often do not like what they do to us, our bodies and our minds !
I had seen sweet potato brownies, beetroot brownies etc, floating around the internet. But wasnt game enough to try them or eat them!

One day a friend brought me a brownie, I ate it, FELL IN LOVE and then she disclosed to me that it was a SWEET POTATO BROWNIE!!!!!!!

So I got creative, and created the BEST MOIST DECADANT brownie EVER

  • 1 medium sweet potato

  • 2 whole eggs

  • ½ cup melted coconut oil

  • ⅓ cup honey

  • 2 teaspoons vanilla extract

  • ½ cup raw cacao powder

  • 1 teaspoon baking powder

  • 1 teaspoon baking soda

  • 1/4 cup almond meal

You will need to preheat the oven to 180’-200’ degrees celcius.

  1. Chop the sweet potato roughly and boil for 15 minutes until soft.
    Allow to cool.
    Place in a bowl and mash sweet potato. Then add in the eggs, vanilla, honey and coconut oil. Mix all together.

  2. Add in the dry ingredients.
    (TIP : It is better to be on the wetter side with the mixture rather then the dryer side, as almond meal absorbs liquid you will end up with really dry brownies if you use too much)

  3. Pour mixture into tray that is lined with baking paper.

  4. Cook for 30-40 minutes.

  5. Allow to cool in fridge. Cut into squares!
