Healthy Carrot Cake

Okay, who doesn’t like cake?

Cake Ingredients

1 + 1/3 Cup Almond Meal Flour
1/2 Cup Arrowroot Flour
1 TSP Baking Powder
1/4 Cup Stevia
1 TSP Nutmeg Powder
1 TSP Ginger Powder
1 TSP Cinnamon Powder
4 Carrots (Finely Chopped/Food Processor)
1/4 Cup Walnuts
3 TBS Apple Sauce
1 Egg

Cream Cheese

3 TBS Light Cream Cheese
1 TBS Greek Yoghurt
1 TSP Maple Syrup
2 TSP Stevia
8 Walnuts Finely Chopped
Pinch of Lemon + Lime Rind

Method

Preheat the oven to 180’C.
Mix all the dry cake ingredients together in a large mixing bowl.
Add in the wet ingredients and mix together. It should be a paste like consistency.
Use a non stick loaf pan, or 9x9 tin. Scoop mixture in and press down with spoon.
Pop in the oven, bake until the top becomes golden brown and slightly firm to touch on top.
Remove from heat and allow to FULLY cool before putting icing on top.

To make the cream cheese icing.
Place cream cheese, yoghurt, maple syrup and stevia in a small bowl and mix.
Put in the fridge until the carrot cake is cool.
Scoop mixture on top of the cake. Decorate the cake and sprinkle with walnuts, lemon and lime rind.
