Healthy Raspberry and Spinach Pancake

Ingredients for 4 servings
300g Baby Spinach
2 Eggs
3 Egg Whites
2 Cups Oats
1/4 Cup Almond Milk
3 TBS Stevia

Raspberry Compote
1 Cup Raspberries (frozen is fine)
2 TBS Stevia
1/4 Cup Water

Blend all ingredients in a nutribullet/blender.
Cook with whatever oil you would like, coconut/olive etc.
Pour mixture into pan, cook on one side till you see bubbles forming, then flip and cook on the other. Should have small patches of golden brown areas.

Compote : Put all ingredients in a saucepan, cook until the raspberries are ‘soft’ and ‘mushy’.
